Boondi Laddo

ఈ పర్వదినాన  మీకు ఒక సంప్రదాయ వంటను అందిస్తున్నాను .


Dish of the Day:

 






Ingredients: Bengal gram flour ,Ghee - 1 1/2 tbsp,cashews, sultanas(raisins),sugar and cardamom powder.


Procedure:
For 1 cup of gram flour 1cup of sugar is required.


Fry cashew nuts, and raisin in ghee separately and keep it aside.
First you have to prepare the sugar syrup and keep it ready.Take a pan, add water and sugar, mix well first. Then bring it to boil.Boil sugar syrup till you get a one string consistency.


How to find one string consistency?

1.When you pour a little sugar syrup in a plate with little water, it should not dissolve.

2.When you touch it between your index finger and thumb and pull it apart, it should form a string.

3.Or just lift the ladle from the sugar syrup and wait for a few seconds- it will form a string. Switch off the flame.

Add cardamom powder,  fried cashew nuts, raisins  to the sugar syrup.


Mix water to the flour and  make a batter.Add water little by little carefully to get the batter consistency.Heat oil and pour a little batter on the boondi ladle and gently tap it. Tiny droplets of batter will fall into the hot oil. Fry till golden brown. Keep aside.Note - Do not fry it too crisp as for South Indian mixture or kara boondi. Remove it from oil a stage before that.Repeat the process for the rest of the batter.

After the boondi cools a little, add it to the sugar syrup. Now mash the boondi with your hand.
Add a tbsp of ghee and make balls out of it.

If the boondi in the syrup becomes dry and if you cant make balls, dont worry add some hot milk little by little and try to make balls again.( Adding Milk will help you when you overfried the boondi).


Now allow the laddoo dry for some time.


Some people add pachai karpuram to syrup.You can add chopped almonds anything as per your taste.





Tip of the day:


To kill bacteria in kitchen sponges (the cleaning variety that is - not cake), put them into the microwave for 30 to 40 seconds, then wash in the usual way.   BE CAREFUL - they are very hot in the centre so make sure you run them under cold water before squeezing.
