Aanapakaya (Sorakaya) Pulusu

Dish of the Day:

 Sorakaya Pulusu (Anapakaya Pulusu,Bottleground Gravy):




Ingredients:11/2 cup Bottlegourd Pieces,1 cup onions,1 cup tomatos,2 chillies,8 tbsp grated Jagerry, 1/4 tbsp turmeric, 1/2 tbsp chilli powder,salt,soaked tamarind and 1/2 cup Toor Dhal


For Tempering: Oil,Mustard seeds,Jeera, red chilli,Curry leaves


Procedure:Cook toordhal in a pressure cooker and mash it like a paste. Empty the dhal into a saperate bowl add some salt and keep aside. Now pour 3 cups of water into cooker and place on stove. When water is boiling, add bottleground pieces,onions,tomatoes,salt,chilli powder and turmeric. Let it boil for sometime. When all vegetables are cooked add tamarind juice and 1 spoon of cooked dhal. Now its Tempering time. Place small pan on stove and add all tempering ingredients. When it stops sizzling pour it into cooker. Make sure you dont burn the tempering. Make it boil for 10 mins and add jagerry and boil for further 5 Mins. Now serve Bottle ground pulusu with Cooked plain dhal.






Aanapakaya (Sorakaya) Pulusu is good with hot rice and Papad as a side.


Tip of the day:


When boiling corn on the cob, add a pinch of sugar to help bring out the corn's natural sweetness.
