Kachori:Ingredients:
For Dough:1 Cup Pain flour(Maida,1tbspButter or ghee or oil,salt,1 tbsp ajwain seeds and water.
For Stuffing: 3/4 cup Green peas(frozen),1/2 tbsp jeera,1/4 tbsp grated ginger,finely chopped chillies and 1/2tbsp amchur powder
Procedure:Mix all the dough making ingredients by slowley adding water. Maket it stiff and leave aside for 15 mins. Place a pan on stove and splatter some oil now add jeera,chillies and grated ginger.Now add green peas,amchur powder,salt and saute it for sometime. When greenpeas are cooked, mash them and turn off the stove. Divide the dough into 16 equal sized balls by using wet hands, smear each portion with a little oil.Flatten and roll out into 2inch round.Wrap one portion of stuffing in each round and roll into a smooth ball, using greased hands.Again, flatten and roll those into a 3-4 inch rounds.Heat plenty of oil in a deep frying pan or a kadhai.Now lift the rolled kachori and carefully slip it into the hot oil.Immediately cover them with hot oil over the top of it with a spatula so that it will swell up like a ball.This should take only a few seconds. Flip the kachori over and cook the other side until golden brown.Serve the kachori hot with green chutney. Add 1 tbsp rice flour for crispy kachori.
A good combination for kachori is green chutney and then tamarind chutney.
