Strawberry Mousse

Dish of the Day:

 Strawberry Mousse:


Ingredients:11/2 cup Chopped strawberries, 1 cup Whipped Cream or Single cream, Icing Sugar, Gelatine Leaf. 

Procedure:Soak the gelatine leaf in cold water. Blend the strawberries as a puree by using a blender. Transfer the puree into a sauce pan on the medium heat. Now make the cream into a stiff texture by whisking. Add the gelatine leaf to the puree. Mix it untill gelatine is dissolved and switch off the stove. Now add the whipped cream into the puree and whisk it into a smooth puree. Transfer the puree into moulds  and tap to the floor to remove air bubbles.Now refregirate them for 3 to 4 hours. When it sets completely, Empty it on a plate and garnish with whole strawberry ,strawberry sauce and mint leaves.




Now its serving time!!!!!!!!!!!


























GelatineGelatine is a translucent, colorless, brittle (when dry), flavorless solid substance commonly used as a gelling agent in food



Tip of the day:


. To prevent egg shells from cracking, add a pinch of salt to the water before hard-boiling.

Pumpkin Pulusu

Dish of the Day:

Pumpkin Pulusu:

Pumpkin Pulusu:


Ingredients: 1cup of Peeled and chopped Pumpkin pieces, 1cup chopped onions,1tbsp chopped chillies,salt, chilli powder, coriander leaves ,2tbsp grated jagerryand soaked tamarind .
For Tempering: Mustard seeds,Jeera,Red chilli,curry leaves,oil


Procedure: Place a pressure cooker on stove,add tempering ingredients when those splatter add chopped onions and chillies. Let them fry untill onions become soft. Now add Pumpkin pieces,salt,chilli powder and Tamarind juice.Close the lid. After two whistles open the lid and add grated Jaggery and corriander leaves. 


Pumpkin Pulusu is to be serve with rice, but while eating mixing it with plain dhal is delicious.





Tip of the day:



To easily remove burnt-on food from your skillet, simply add a drop or two of dish soap and enough water to cover bottom of pan, and bring to a boil on stovetop-skillet will be much easier to clean.

Potato and Leeks Soup

Dish of the Day:

 Potato and Leeks  Soup:




Ingredients:  2cups of chopped Potato, 1/2 cup leeks, Basil,2 or 3 garlic cloves,pepper powder,salt,veg stock and olive oil. 
Procedure:Place a sauce pan on stove. Put 1 tbsp of olive oil and add garlic cloves.Now add leeks, fry for some time.  when they become soft, add 2 cups of water,salt,veg stock and pepper powder.Let it boil. Now add potato pieces and close the lid.When everything is cooked, turn off the stove and let it cool. Empty the sauce pan in to a blender and  blend it into a puree. Now transfer the puree in to the sauce pan and add some water.Leave it boiling for 3 mins. Add Basil, salt and pepper as per your taste.
Now its serving time!!!!!!!!
You can serve the soup by adding cream to it.. But without cream and less salt is the healthy way.




Tip of the day:



To keep potatoes from budding, place an apple in the bag with the potatoes.

ButterMilk Dosa

Dish of the Day:


Butter Milk Dosa:



Butter milk dosa is very crispy and dellicious.......


Ingredients: 1/2 cup rice flour,4 tbsp Buttermilk, salt, 1tbsp finely chopped chillies,2tbsp finely chopped corriander leaves,1/2 tbsp jeera.,3tbsp very finely chopped onions,oil for frying and water.


Procedure: Take a bowl and mix all the ingredients except oil and water. Now add water slowly and mix it like a watery batter(Just like ravva dosa batter).Now place a dosa pan on stove. Sprinkle the batter on the pan with a spoon(garita) in the shape of dosa. Now sprinkle some oil on it and make sure it is on medium flame otherwise rice flour doesn't cook well.  You will observe that within few minutes dosa will start to saperate from the pan. When you see a golden colour you can start removing it from the edges slowly moving in to the middle.




This dosa doesnt require any chutney because this dosa itself contains all spices required to eat. If you like you can have with sugar.



Tip of the day:


When you buy huge amount/bunches of coriander, Cut the edges and put them in a air tight container.Place the container in fridge. You can place a tissue inside the container so that it will be fresh for a long time.

Spinach,Brocolli and Geen peas Soup

 Dish of the Day:

Today I would like to share another soup recipe which is healthy and tasty.

 Spinach,Brocolli and Green Peas Soup:


Ingredients:1 cup of chopped Brocolli, Icup of chopped Spinach(Palak),1 cup of Green peas,1/2 cup leeks,2 or 3 garlic cloves,pepper powder,salt,veg stock and olive oil. You can use frozen peas and frozen brocolli.


Procedure:Place a sauce pan on stove. Put 1 tbsp of olive oil and add garlic cloves.Now add leeks, fry for some time  when those becomes soft add 3 cups of water,salt,veg stock and pepper powder then let it boil. Now add brocolli, when it is half done add spinach and peas and close the lid.When everything cooked turn off the stove and let it cool. Now empty the sauce pan in to a blender and  blend  into a puree. Now transfer the puree in to the sauce pan and add some water and let it boil for 3 mins. Add salt and pepper as per your taste.
Now its serving time!!!!!!!!



You can serve the soup by adding cream to it.. But without cream and less salt is the healthy way.

Tip of the day:


Add few grains of rice in the bottom of salt box. So the salt will stay dry. This tip will be very useful for people who are living in cold areas  .

Chocolate Bowls

Dish of the Day:
Today I would like to share a creative one!!!!

Chocolate Bowls:
Ingredients: Chocolate pieces, Butter,Foil sheet,Balloons(blow your balloons and keep a side)

Procedure:
Place a small size sauce pan on stove with water(Half filled).Now take another bowl and place on the sauce pan. Now put chocolate pieces in the bowl and let it melt. Mix the chocolate with a spatula to avoid lumps.When it becomes smooth and silky consistent, turn off the stove and let it cool. Apply melted butter to the balloons(So that chocolate wont stick to it).Now dip the balloon in the chocolate and place on a foil sheet as shown in the image.Let it dry for some time. Now carefully remove the chocolate bowls from the balloons. Finally, its ready for your garnishing.



How to Chocolate from a balloon: First care fully press the balloon and saperate the edges of cholocate from balloon.Now pin the balloon and saperate it from chocolate.

Note: The chocolate meltt should be in medium hot otherwise the balloons will blow up and decorate your kitchen with chocolate!!!

You can use these chocolate bowls for garnishing like fruit bowls,ice cream bowls. Also you can make chocolate bowls colourful by using white chocolate and food colours. You can make different shapes like coffee cups,cylindrical,square(Boxes) and Tulips as well.

Chocolate Tulips: Its very simple to make.It all depends on dipping techniques.Dip the balloon in choc melt and tilt  front and back and left and right.Now let it dry.


Tip of the day:

When a cake recipe calls for flouring the baking pan, use a bit of the dry cake mix instead-no white mess on the outside of the cake.

Pumpkin Soup

Dish of the Day:


Today I would like to share one  healthy recipe.....
Pumpkin Soup:


Pumpkin soup is very tasty and healthy too.

Ingredients: 2 cup peeled and chopped pumkin pieces,1/2 cup leeks,Pepper powder,salt Veg stock tablet,2 or 3 garlic cloves,corriander leaves,cream and 1 tbsp olive oil.




Procedure:Place a sauce pan on stove. Put 1 tbsp of olive oil and add garlic cloves.Now add leeks, fry for some time.When those become soft add 3 cups of water,salt,veg stock and pepper powder then let it boil. Now add pumkin pieces and close the lid.When pumpkin becomes soft turn off the stove and let it cool. Now empty the sauce pan in to a blender and  blend  into a puree. Now transfer the puree in to the sauce pan and add some water and let it boil for 3 mins. Garnish with corriander.
Now its serving time!!!!!!!!



You can serve pumpkin soup by adding cream to it or some bread croutons. But without cream and less salt is the healthy way.

Tip of the day:


To keep vegetable like pumpkin,kandh, doodhi(anapakaya or sorakaya) freshen for long time,  Peel them and cut into pieces. Place in a ziplock bags and put it in freezer.

Ravva Dosa

Dish of the Day:
Today I would like to share one of my Husband's favourite breakfast...

1. Ravva Dosa:
Ravva dosa is very crispy and very easy to make and also takes very less time to prepare.



                                                                  RAVVA DOSA
Ingredients: 1/2 Cup Rice flour,1/2 Cup Ravva(Suji), 2tbsp Finely chopped chillies,1tbsp Finely chopped cashews,1tbsp Finely chopped coconut,1 tbsp  jeera, 1tbsp soaked pepper corns,oil,salt and water.

Procedure: Mix all the ingredients except oil and water.Add water and make it into a watery batter. Add cashews,coconut and pepper corns as per your taste. Now place a dosa pan on stove. When pan becomes hot enough, sprinkle the batter on the pan with hand or spoon as per your convenience in dosa shape. Make sure you are using medium flame. Now sprinkle oil(1 tbspn) on the dosa. within few minutes dosa started to saperate from the pan. When you see a golden colour you can start removing it from the edges slowly moving in to the middle and serve with chutney.

You can fold  ravva dosa in different shapes shown below...


And coming to Chutneys, Coconut chutney is wonderfull combination for Ravva Dosa..

You can make it within 5 Minutes!!!!!!

Coconut Chutney:
Ingredients: 1 Cup Chopped coconut pieces,3 or 4 chillies, soaked tamarind, salt and water.
For Tempering : 1/2 spoon Urid dhal,1/2 spoon Channa dhal, 1/4 spoon mustard seeds,1/4 spoon jeera, Curry leaves, 3 Dried red chillies.

Procedure: Blend coconut pieces, chillies and salt in a blender and make it as a coarse paste. Now add tamarind water.  Now, for Tempering, take a small pan or kadai on stove. Add 1 tbsp oil, when it becomes hot add mustard seeds, jeera, urid dhal wait for some time untill urid dhal slightly turns into golden brown. Then add channa dhal here it will take few second when channa dhal turns into golden colour add chillies and curry leaves. Now add the tempering to the coconut mixture.

Now its serving Time!!!!!!!!!!!!


Tip of the day:

When doing tempering to any dish, if the tempering is about to burn add some salt immediately it will stop burning.
