Gutti vankaya

Dish of the Day:




                               

                                                                                       
Ingredients :Tender Brinjals(baby) : 1/2 kg,Oil to fry and finely chopped coriander leaves,1/4 tbsp Cumin Seeds(Jeera), 1/4 tbsp Mustard seeds,1/2 tbsp Channa dhal,Curry Leaves : few,1/2 cup chopped onions and 1/2 cup chopped tomatoes





For stuffing:Tamarind : 1 lemon size,garlic cloves : 3,1/2 cup onionsTurmeric powder : 1/2 tsp,1/2 tsp chilli powder,1/2 tbsp corriander powder,1/2 cup ground nuts,1/4 cup black sesame seeds and
Salt to taste



Procedure:
 Take a pan and roast groundnuts and black sesame seeds saperately.



Take a blender and blend all stuffing ingredients into a coarse powder.






Now add tamarind juice and blend into a smooth paste.






  Wash and cut  the brinjals as shown in photo and stuff the masala paste into brinjals and keep aside.

















Now place a pressure cooker on stove and pour 1tbsp oil.Add mustard seeds and jeera. Now add onions and fry until soft, then add tomatoes and fry for sometime.


Add stuffed brinjals ,salt and 1 cup of water  to fried tomatoes and close the lid. Turn off the stove after two whistles.


Garnish with corriander leaves and serve with hot rice.




   




Tip of the day:
 Never fill the pot more than halfway with oil; this will 
   prevent bubbling over when the food is added.

Rasam Powder

Ingredients: 1+1/2cup Coriander seeds,1/2cup Black peppercorns,1/2tsp Cumin seeds,1tbsp Toor dhal
                      1tbsp Channa dhal,1/4tsp Fenugreek seeds,5nos Dry Red chillies,3sprigs Curryleaves and
                      1tsp Turmeric powder

Procedure:Dry roast  all the above ingredients separately without oil in simmer except the turmeric powder..let them cool n grind as bit coarse powder with turmeric powder.Now again grind them as smooth powder.Store it in air tightened bottle.

1/2tsp of this rasam powder is largely enough to prepare a bowl of rasam...

Ingredients :
                  Tomatoes-2, Toor dhal -1/4 cup,tamarind juice,salt,3 cloves of garlic,3 dried red chillies,1/4tbsp mustard seeds,1/4 tbsp jeera,2 tbsp chopped corriander leaves ,1tbsp peppercorns,1tbsp rasam powder and water
                      


Procedure: 
                   Cook toordhal in a pressure cooker,mash it  and keep aside. Now take a small grinding stone(rubbu rolu in telugu) first grind peppercorns, then peeled garlic cloves and add half of chopped corriander leaves to it and grind them.If you dont have a grinding stone you can do it with round spatula(pappu guthi in telugu).
                  


                      Place a thick bottomed vessel on stove and pour 1tbsp oil.When oil becomes hot add mustard seeds,jeera and dried red chillies to it.Now add grinded cloves mixture to it and fry it for 3mins. Add chopped tomatoes and fry them for some time. Now add mashed dhal to it and add tamarind juice. Mix the dhal and tamarind juice with hand( squeeze all the tomatoes and red chillies to enhance the flavour).Add salt,rasam powder and two cups of water and keep the flame medium high and boil it for 10 mins.Now garnish with some curry leaves and chopped corriander.
